What Does kcal Mean?

kcal is short for kilocalorie, and on a food label it means exactly the same thing as the word Calorie written with a capital C. A 250 kcal snack and a 250-Calorie snack are identical. The prefix causes most of the confusion: a kilocalorie is a thousand of the calories used in physics, and food labelling has quietly used the larger unit for over a century.

What the unit measures

A calorie is a unit of energy, defined by heating water. One small calorie is roughly the energy needed to raise one gram of water by one degree Celsius. One kilocalorie is a thousand of those — enough to raise one kilogram of water by one degree.

Food energy is quoted in kilocalories because the small calorie is inconveniently tiny. An apple holds around 95,000 small calories, which is an absurd way to label fruit. Written as 95 kcal it is legible.

Why labels say Calorie when they mean kilocalorie

This is the single most common point of confusion, and it is entirely a historical accident of notation.

The convention is that a capital-C Calorie denotes the kilocalorie, while a lower-case calorie denotes the small one. American nutrition labels use the capitalised form and drop the prefix; British, European, Australian and most other labels write kcal directly. Both describe the same quantity of energy.

So the three figures below are one number in three notations:

The capitalisation is doing real work in the first row, which is why it is such a reliable source of confusion.

In practice, no food label anywhere means the small calorie. If you see a calorie figure attached to food, it is a kilocalorie regardless of how it is spelled.

Converting between kcal and kilojoules

Many countries print kilojoules alongside kilocalories, and Australia and New Zealand lead with kJ. The conversion is fixed:

1 kcal = 4.184 kJ, and going the other way, 1 kJ = 0.239 kcal.

Two worked conversions. A 500 kcal meal is 500 × 4.184 = 2,092 kJ. An Australian label showing 1,700 kJ is 1,700 ÷ 4.184 = about 406 kcal. For rough mental arithmetic, dividing kilojoules by four gets you close enough to compare two products in a supermarket aisle.

Where the numbers on a label come from

Food is not usually burned in a laboratory to produce the figure on the packet. The energy is calculated from how many grams of each macronutrient the food contains, multiplied by a fixed factor per gram. These are the Atwater general factors, named for Wilbur Atwater, whose work in the late nineteenth century established them:

The Atwater general factors as set out by the FAO. The alcohol figure is a rounded 7.0; the unrounded value is 6.9 kcal/g.

So a yoghurt containing 10 g of protein, 20 g of carbohydrate and 5 g of fat works out at (10 × 4) + (20 × 4) + (5 × 9) = 165 kcal, or 165 × 4.184 = 690 kJ. That is the whole calculation behind the panel on the back of the pot.

Fat being worth more than twice as much as protein or carbohydrate per gram is the practical takeaway here. It is why a small quantity of oil moves a calorie total so much more than the same weight of most other foods. Our macro calculator uses these same factors to convert between grams and calories.

Why the label figure is an approximation

The Atwater factors are averages, and treating them as exact hides two separate sources of error.

The first is that the factors vary by food. Alongside the general factors, the FAO documents specific factors developed by Merrill and Watt in the 1950s, which differ by food type — protein ranges from about 2.44 kcal/g in some vegetable sources to 4.36 kcal/g in eggs. The universal 4 kcal/g is a convenient midpoint, not a constant of nature.

The second is more interesting: some foods do not give up their energy. Novotny, Gebauer and Baer measured the energy humans actually absorb from almonds and found 4.6 kcal/g — 129 kcal in a 28 g serving — against the roughly 6 kcal/g the Atwater factors predict. The authors report this as a 32% overestimate relative to the measured value. Much of almond fat stays locked inside intact cell walls and passes through undigested.

None of which makes calorie counting useless; the figures are consistent enough to compare foods and to track intake over time. But it does mean the number on a packet is an estimate with real error behind it, and that treating a daily total as precise to the calorie is false precision.
